German Chocolate Ganache S’mores

To make up for the health kick that was the Garlicky Butternut Squash Chips from yesterday, I present you with they sticky, sugary, rich decadence that are these German Chocolate Ganache S’mores.

Traditional s’mores are great. They are amazing. These are decadent! If traditional s’mores are for camping, then these German Chocolate Ganache S’mores are for glamping! You get the picture.

Prepare the German Chocolate Cake Filling and Chocolate Ganache ahead of time. It may help to keep the pecans separate and sprinkle them on before serving so that they don't get soggy.
Ingredients
  • German Chocolate Cake Filling:
  • 4 egg yolks
  • 1 can evaporated milk (12 oz)
  • ¼ cup brown sugar
  • 1 cup granulated sugar
  • dash of salt
  • 1 tablespoon pure vanilla extract
  • 2½ cups shredded coconut
  • 1 cup toasted chopped pecans
  • Ganache:
  • 2 Cups semi-sweet chocolate chips
  • ¾ cup heavy cream
  • 1 package graham crackers
  • 1 package marshmallows
Instructions
  1. German Chocolate Cake Filling:
  2. Whisk together the 4 egg yolks in a saucepan, add the evaporated milk and sugars and salt and whisk throughly. Put the saucepan on medium-high heat and whisk constantly until it appears foamy and starts to thicken. This usually takes 6 to 8 minutes. Remove from heat and transfer to a separate bowl. Stir in vanilla and coconut. Let cool, then refrigerate until use.
  3. Ganache:
  4. Use a double boiler or place a glass bowl on top of a sauce pan that has a couple inches of water in it. Put the chocolate chips and the heavy cream in the double boiler and don't stir until the chocolate is melted. Once the chocolate it melted, stir thoroughly and then remove from heat.
  5. Coat the graham crackers with a layer of chocolate and stick them in the refrigerator.
  6. Roast the marshmallows; slap that gooey goodness on the chocolate coated graham cracker. Put a spoonful of German Chocolate Cake Filling on it and sprinkle with the chopped pecans. Place another graham cracker on top and devour!
