It’s so hot! We just moved from Arizona to the California desert, one ridiculously hot place to another ridiculously hot place. Around these parts, ice cream is always in order. So the girls and I decided it would be fun to make ice cream shaped ice cream sandwiches. I learned that if you decide to make ice cream sandwiches in the middle of summer, you better work pretty darn fast!
The chocolate cut-out cookie dough has a great flavor and is not too soft, but not to crunchy either. Perfect for an ice-cream sandwich.
I received these little treat bags with purple twist-ties, purple bakers twine and little tags, which are a perfect size for the the personalized stamp. I love having everything packaged so neatly, plus the bags catch drips from the ice cream!
The stamp from Expressionary arrived in the cutest package a handy storage bag.
- 1 egg
- ¾ cup sugar
- 1 stick (1/2 cup) butter (softened)
- 1 tsp vanilla
- ¼ tsp salt
- ½ tsp baking powder
- ½ tsp baking soda
- 1-1/2 cups flour
- ⅓ cocoa powder
- 1 pint ice cream
- In a large bowl, cream together butter, sugar, egg and vanilla. In a second bowl, mix flour, baking powder, baking soda, salt and cocoa together. Add this to the butter mixture, beating until blended. Cover and refrigerate for at least 1 hour.
- Preheat oven to 325 degrees. Roll out small amounts of dough at a time on wax paper, between ¼ and ½ inch thick. Cut out with cookie cutters and transfer to a parchment lined baking sheet or an ungreased baking sheet. Bake for 5-6 minutes and cool on wire rack.
- Working very quickly, once cookies are cool, place a scoop of slightly softened ice cream on to cookie. Place another cookie on top and apply gentle pressure. Using the dull end of a butter knife, scrape excess ice cream off of cookie and fill in any gaps. Apply sprinkles to edge of ice cream sandwich and put immediately into freezer.
