I know what you’re thinking, because I thought the same thing. Beer and milkshakes do not go together. Beer has a very distinct taste and milkshakes are super sweet and rich. But it works, I swear. The coffee stout is fantastic, because it has such strong coffee and caramel notes, that it really adds a richness to the milkshake.
The coffee beer makes the milkshake boozy and buzzy.

A good craft brewed stout with a strong espresso flavor can pretty easily be sourced at your local specialty beer store. Locally to Arizona, I found a ton at Total Wine. It was a difficult choice to make, but I went with the Coffee Bean Stout from the Grand Canyon Brewing Company and it tastes delish!
The recipe is simple, all you need is the coffee stout and vanilla ice cream. I added some freshly grated chocolate and just a bit of finely ground coffee beans for a little punch of flavor. Blend it all together. I use my trusty immersion blender.
Pour your milkshake into a pilsner glass and garnish with some grated chocolate. You don’t have to share.

I’ve been mixing beer and ice cream since Red Robin released their beer shakes 5 or so years ago. I used to always get the Irish beer shake which was Guinness, Irish whiskey, and chocolate ice cream. Guinness just released a coffee stout which is incredible.
