I’ve been obsessed with popcorn for a while now. It’s perfect for when you are craving carbs, but not something too heavy. Plus it’s loaded with fiber. Of course you can destroy it by adding too much butter, unhealthy oils and artificial junk. Of course a little butter tastes great and you can make flavors go a long way, which is what I did with this amazing Rosemary, Garlic and Parmesan Popcorn.

There are lots of ways to prepare your popcorn. I have this Waring Pro Popcorn Popper, which I absolutely love. The popcorn always comes out perfect, it has never been moist, soggy or chewy, just crunchy, light and perfect. I use 1/3 cup of organic popcorn and 1 tablespoon olive oil and let it pop until the popping slows down. It takes just a few minutes and it gives me time to get my butter all melty on the stove top.
Using fresh herbs and spices and real butter (I use Kerrygold) on the popcorn makes all the difference in the world. Chop the rosemary into small pieces, mince the garlic and let the flavors mingle with the slowly melting butter.
Once all melted, set aside and start popping your popcorn, while the popcorn is popping grab your block of parmesan and a microplane (or a small grater if you don’t have a microplane) and grate some cheese. Freshly grated parmesan melts so well on the hot popcorn, much better than the kind in the refrigerated tub and definitely better than the kind that comes in the bag in the cheese section.
Once the popcorn is popped, pour on the butter mixture. Toss it around the bowl to evenly coat. Sprinkle the grated parmesan over and devour. Eat the whole bowl, I won’t tell.

Rosemary, Garlic and Parmesan Popcorn
Ingredients
- 1/3 cup popcorn kernels
- 1 tablespoon olive oil
- 3 tablespoons butter
- 1 clove garlic, minced
- 1-2 sprigs fresh rosemary, chopped
- 3 tablespoons freshly grated parmesan cheese
- sea salt and pepper to taste
Instructions
- Melt butter, rosemary and garlic together on low. Set aside.
- Pop popcorn in popper with olive oil. Or use whatever popping method you prefer. While the popcorn is popping grate the parmesan
- Pour butter mixture over hot popcorn. Toss popcorn in bowl to mix evenly.
- Sprinkle warm popcorn with parmesan.
