I recently found a recipe for Salmon Cakes on eatingwell.com. They called for canned salmon and were delightfully tasty, but a little dry. Mr. Sparklepants gave them a 6 out of 7. I guess that’s okay, but it’s not the point of this post. This is:
You are thinking to yourself, why is she showing me a picture of some sauce that she as ran her tasting finger through more than once? ‘Cause it is freaking amazing. The Creamy Dill Sauce that was called for in the Salmon Cakes recipe was modified by yours truly and became the Glorious Dill Sauce. Seriously, I could eat this stuff on everything..and I will.
Glorious Dill Sauce
1/2 cup Greek yogurt *love this stuff*
1/2 cup mayonnaise (reduced-fat or full strength)
2 to 3 tablespoons fresh baby dill
1 large clove garlic chopped
2 to 3 tablespoons green onion chopped
Squeeze of fresh lemon juice
Twists of fresh ground pepper to taste
Blend all. Throw in fridge for a few hours. Ta da!
We’ve used this with veggies, chips, in a cold pasta salad and of course the salmon cakes. That was just this week. Seriously, this is perfectly refreshing for the late summer.
