cheating on my diet: cake batter rice crispy easter eggs

While hopping around on the internet the other day I came across this recipe at Gimme Some Oven for Cake Batter Rice Crispy Treats, and my mouth started watering. Now, for the most part I don’t like to cook anything with mixes, I’m a ‘from scratch’ kind of gal. But there is something delicious about yellow cake mix batter. Sometimes I come across Cake Batter Frozen Yogurt and it takes all my willpower to resist the unique flavor that only yellow cake mix can provide.

I grabbed the ingredients at the store: Rice Krispies, butter, marshmallows, yellow cake mix, and some sprinkles. As I was checking out the Easter candy isle I found a sweet little deviled egg dish and the brilliant idea came to make the treats into egg shapes. Little enough for the sparkletots and perfect-sized for me to help prevent over-indulging (yeah right).

I melted the marshmallows and butter, just like making regular old Rice Krispy Treats and while the marshmallows were melting I slowly mixed in 1/3 cup of cake mix. I added the cereal and some sprinkles and mixed well.

To form the eggs I found it easiest to butter up my hands and then shape the treats. Although there are two things I should have done. One, I should have removed my ring, and two, I should have waited until the treats cooled a little longer, so they weren’t so gooey.

Easter eggs wouldn’t be easter eggs without some decorations, so I pulled out the writing icing and got to decorating.

But rice crispy type eggs aren’t very smooth and are a little tough to make pretty.

Next time I’ll just stick with sprinkles. I’ll give these ones to the kiddos..

And keep these ones for myself.

    Thank you so much for linking up! These egg treats look delish!! I’ve never heard of using cake batter in krispie treats…. it sounds yummy! I’ll have to make them for company cuz’ I would be tempted to eat them all myself!
