The sun is out but it is nice and cool this morning. I love cool, crisp fall mornings.
This morning was a hot breakfast kind of morning. I wanted to make the sparkletots pancakes..but my early morning attention span wasn’t feeling up to standing in front of a hot griddle for any amount of time. So I made a Dutch Baby, or a Puffy Pancake as the 3 year old sparkletot calls them.
It’s easy and quick.. The trick is to turn your oven on to 400° and stick your pie pan or cast iron skillet in it..so that the pan heats up while you are mixing up the ingredients.

Now comes the fun part..toppings. We sprinkle powdered sugar on it, then load it up with berries, sometimes a little squirt from a lemon wedge, and on a good day, chocolate chips or Nutella.
