I made the best treat for myself this weekend. It was salty and crunchy and had cheese and pesto. Yes, I put pesto and parmesan on my popcorn and it was amazing! I’m just going to apologize now for ruining your diet. It’s pretty rude of me. But this popcorn had so much flavor that you really have to try it. Like you need to try it today.

Freshly popped popcorn is one of my favorite snacks. I love it plain with a little bit of butter and a hint of salt. Or drizzled with a flavored olive oil and some freshly grated parmesan. Or with fresh herbs like my rosemary, garlic and parmesan popcorn. But I had never thought of adding pesto before. I had just happened to look in the fridge and see the last of a jar of prepared pesto. (Homemade pesto would be even better on it! Next time for sure!) So I tossed it in to my lightly buttered popcorn. I grated my parmesan and added a generous helping. I love fresh parmesan so much. I sprinkled a little freshly ground pepper and voila! It was such a decadent snack. Portion control went out the window.

I use the Waring popcorn popper, and I love it. The popcorn comes out nice and crunchy. I buy Bob’s Red Mill organic popcorn kernels by the case off of Amazon. Once I open a bag I put the kernels in a large jar and store it in the refrigerator. I read it stays fresher that way.
Popcorn is an enjoyed treat around here. Great new flavor idea!
