I feel like it’s been a while since I’ve shared an easy one dish meal that is perfect for a weeknight dinner or a side at a summer potluck. One that the whole family will love and is full of veggies and protein. I love this egg bake because you can add almost whatever vegetable you have on hand.
Got some bell peppers that need to be used ASAP? Dice them up and through them in. Have way too much zucchini from your summer garden? Grate it and through it in! Plus, this dish can be prepared ahead of time. I’ll brown the ground beef on Sunday and have it in the fridge ready to go into the egg bake for Tuesday’s dinner. Or skip the meat all together and use it as a side for your summer BBQ. It’s too easy!

Eggs are a staple in my house. We go through a minimum of two dozen a week. So much that I can easily tell the difference between the eggs from pasture raised, grass-fed hens, and those eggs from chickens living sad lives in a factory. I’m using Handsome Brook Farm Organic Pasture Rasied Eggs. While many farms have thousands of birds crammed into houses or cages, Handsome Brook Farm hens get at least 108 square feet per bird on rotated pastures –which is a lot for a one-foot-tall chicken – so you get the best-tasting eggs. The animals are organically-fed, which gives the eggs a beautiful golden-orange yolk and an unmistakable flavor that will take this dish to the next level.

Now, I personally eat low carb so I need the extra fat. If you don’t eat low carb, feel free to switch the half and half to milk and reduce the amount of cheese. But be sure to add lots of veggies!

Ground Beef and Veggie Egg Bake
Ingredients
- 8 eggs
- 1/4 cup heavy whipping cream or milk
- 1 pound ground beef, seasoned and browned
- 1/2 teaspoon garlic powder
- 1 medium zucchini
- 1 bell pepper
- 1/4 cup diced purple onion
- 1 and 1/2 cups grated white cheddar cheese
- salt and pepper
Instructions
Preheat oven to 350F.
Season and brown ground beef. Combine eggs and heavy cream in a large bowl until well mixed. Add 1 cup of cheese, garlic powder, salt and black pepper to taste into egg mixture. Chop pepper and into small pieces and slice zucchini and red onion. Place vegetables in a greased baking dish. Layer ground beef into dish. Pour egg mixture in to baking dish on to beef and veggies. Sprinkle with remaining cheese.
Bake for 40 minutes.
