Crêpes are perfect Valentine’s breakfast because they are easy to make and versatile enough to suit all kinds of pallets. Crêpes are the new pancakes..didn’t you know?
Basic Crêpes
- 1 cup flour
- 2 eggs
- ½ cup milk
- ½ cup water
- ¼ teaspoon salt
- 2 tablespoons melted butter
Mix the eggs and flour and whisk while gradually adding water, milk and salt and finally the butter. Try to avoid too many lumps. Lightly coat a frying pan with cooking spray or butter and heat up to medium heat. Pour about ¼ to ½ of a cup of batter into the middle of the frying pan and swirl it around until it makes a thin circle. Cook for about two minutes until the bottom of the crêpe looks like this:
Then flip and cook until that side looks the same.
If your crêpes are going to be of the sweet persuasion, then it is always tasty to add ¼ teaspoon of almond or vanilla extract to the batter for a little flavor.
Now that the actual crêpes are made, it’s time for the best part..the fillings.
I used Nutella, a mixture of fresh and frozen strawberries and a sprinkle of powdered sugar.
Anythings goes though. You can use any type of berries or fruits, butter with cinnamon and sugar, flavored cream cheese, chocolate chips, even ice cream.. I could go on and on and on.
The crêpes can also be made savory instead of sweet. Cheese, eggs, meats, herbs and spices are just a few examples.
