Cream Cheese Sugar Cookies
1/3 cup butter
1 (3 oz.) pkg. cream cheese, softened
2 c. all purpose flour
2/3 cup sugar
1 egg
1/2 tsp. baking powder
1 tsp vanilla
Beat butter and cream cheese with mixer. Add sugar, egg, baking powder and half the flour. Once well mixed, add remaining flour. Chill until firm, about one hour. Roll out dough on a lightly floured surface and cut into pretty shapes. Bake on an ungreased cookie sheet at 350º for 8 to 10 minutes. Let cool on a rack while you’re making the frosting.
Mint Cream Cheese Frosting
1/2 (8 oz) package cream cheese, softened
2 tablespoons butter, softened
1/2 cup sifted confectioners’ sugar
1/4 tsp peppermint extract or vanilla extract
food coloring if desired
Go easy with the peppermint. Mix together and spread on the cookies! This frosting recipe makes just enough to frost all the cookies without loads leftover. Careful, frosting attracts leprechauns.
