animal cookie icing

I feel like this post should be titled “Tricking My Kids” or “Animal Cookie Hack.” You see, we bought this giant container of organic Animal Crackers at Costco because the kids liked the free sample and wanted more. Darn Costco samples!

They ate them one time at home, and every time I’ve offered them since, the sparkletots have refused. I have been offering them everyday. This ginormous container of animal crackers is taking over my thoughts and my kitchen storage.

Easy solution..I’ll just put icing and nonpareils on them and disguise them as Mother’s Circus Animals and everyone will be happy. The problem was finding the right type of icing. Royal icing hardens too hard and buttercream icing melts and would be too messy. I needed a happy medium.  I googled and searched through tons of recipes for icing and couldn’t find anything that fit the bill (and that didn’t call for ingredients I can’t pronounce).

So I just started mixing ingredients together, trying to concoct the perfect icing for these cookies that will be the right consistency. Here’s what I came up with…

Place a sheet of parchment or waxed paper on a baking sheet. Either dip the front of the cookie into the icing or spread it on with a spoon or pastry brush. Lay it on the sheet. Once your sheet is full, sprinkle with nonpareils and let the icing harden.

Store in an airtight container and watch them disappear!
