I have a new favorite snack. If you’ve been following the blog the past few weeks, it seems like every week I have a new favorite thing to eat. It must be the pregnancy hormones. A few weeks ago it was tomatoes. I still can’t seem to get enough of this Rainbow Tomato Feta Salad. Then last week it was asparagus, and this Quinoa Asparagus Salad with Lemon Pesto Drizzle is so addictive (I’m having it for dinner again tonight.) I know the hot weather (it’s already 95 degrees and its’ not even 9 am) has a lot to do with it, but I can’t complain that my cravings involve fresh vegetables, right?
So anyhow, back to my favorite snack. It’s so easy that I am not even sure I should be posting about it. It’s cucumbers, cheese and herbs with a little pepper. Done.
I use the Laughing Cow Light cheese wedges that I get by the 4 pack at Costco. Each wedge is only 35 calories and 1 carb, so I never feel too guilty about eating them. Of course you can use cream cheese instead, and sometimes I do that, but I love the tang of the cheese wedges.
The best part is toppings. I’ll add some toppings to the cucumbers and cheese depending on what I have. Fresh dill sprigs and freshly ground black pepper, chives and pepper, toasted almond slivers or my absolute favorite, crumbled bacon.

Cucumber Cheese Bites
Ingredients
- 1/2 English cucumber
- 4 light cheese wedges or 3 oz cream cheese
- fresh dill or chives
- bacon crumbles
- slivered almonds
- freshly ground black pepper
Instructions
- Slice cucumbers approximately 1/3 inch thick. Spread cheese on to each cucumber slice.
- Top with choice of fresh herbs, almonds or bacon crumbles.
- Sprinkle with freshly ground black pepper.
